猪肘 2000克,红枣300克,冰糖 300克,甜橙 400克,菜油、川盐、姜、葱、料酒各适量。 </p>

制作过程:

1、猪肘去骨洗净搌干水,入锅炙皮后刮去杂质,洗净,皮向下放置菜墩上,在肉上剞十字花刀,深度为猪肘肉厚度的1 / 3 ~ 1 / 2
处 ,投入放有姜、葱、料酒和川盐的汤锅中略煮,待已除去血污和异味时,捞出入蒸碗中定碗。

2、红枣洗净去核,放入蒸碗内。锅置火上,放菜油烧热后,放入冰糖(捶细)炒化,加水烧沸成糖色,舀入蒸碗内,上笼蒸约3小时至极粑软时出笼,捞出红枣,把汁滗入锅后,将猪肘翻扣入盘,红枣围摆在其周围。
